Mistral AI: when should you choose a European AI model?

AI tools

In short

  • On 29 October Mistral AI released the weights of Mistral Large 4, its largest model. You can use it through the API or run it yourself, including for commercial work.
  • Choose Mistral for tasks where the place of processing, or your dependence on American providers, matters more than the last step in quality. Experts quoted by Dutch broadcaster NOS say Mistral is a few months behind OpenAI and Anthropic.
  • A European provider does not make you GDPR-compliant by default. With Mistral too, check the plan, the training setting and the data processing agreement.

Mistral AI, the French AI company, released the weights of Mistral Large 4 on 29 October. It is the company's largest model so far, nicknamed "Le Chonk" (Mistral). That gives Europe a frontier-class model you are allowed to run on your own servers. Does that mean your business should switch? Usually not entirely. It does make sense to decide which tasks could move to a European model.

Mistral is the better choice when where your data is processed, or how dependent you are on American providers, matters more than having the very best quality. For most knowledge work, the experts NOS spoke to still rate the models from OpenAI and Anthropic slightly higher (NOS, in Dutch). The main condition: a provider being European does not, on its own, mean your data is properly handled.

What is Mistral Large 4?

Mistral Large 4 is a language model with 1 trillion parameters, 52 billion of which are active for any given request. It handles text and images, supports a context of one million tokens and, according to Mistral, is fluent in more than 160 languages, including every official EU language (Hugging Face). Mistral positions it mainly for coding, agents and cybersecurity.

A preview arrived on 6 October. The weights are now available under the Mistral Ecosystem Open-Weight License, a modified MIT licence. You may use and adapt the model commercially. You only need a separate licence from Mistral if you sell the model itself as a service to others (Mistral).

Through the API it costs $0.70 per million input tokens and $2.10 per million output tokens. Mistral also publishes benchmark scores, including a human evaluation of coding work in which the model ranks behind only Claude Opus 5.5. Those figures come from Mistral and have not been independently verified.

How can your business use Mistral?

There are four routes, and the main difference is who processes the data.

RouteWhere it runsSuited to
Vibe, the chat app (formerly Le Chat)In the EU by defaultStaff who want a chat assistant
Mistral APIIn the EU by default, US on requestIntegrations and your own applications
Microsoft Foundry or OpenRouterWith that provider, in the region you chooseTeams already building on that platform
Self-hostingOn your own servers or private cloudOrganisations with strict requirements and in-house operations

If you are looking for Mistral Le Chat: the app has been called Vibe since this year. There is a free tier, Pro costs $14.99 a month and Team $24.99 per user per month, excluding VAT. Enterprise is priced on request and adds SAML SSO and audit logs, among other things (Mistral). Of the apps, Mistral only mentions Vibe Code, its coding environment, for Large 4. It does not say whether the model is also in the regular Vibe chat.

Mistral stores your data in the EU by default. Depending on the feature, it may be sent temporarily to subprocessors outside the EU, and Enterprise customers can switch some of that off (Mistral Help). In Vibe, your inputs and outputs are used to train models by default unless you opt out. Enterprise customers are opted out by default (Mistral Help). Mistral does not say how this works for Team, so ask before a team starts using it.

When should you choose a European AI model?

Mistral deserves a place if one or more of these apply to you:

  • Clients or regulation require processing in the EU. Think of healthcare, government, financial services or contracts that say so. EU hosting by default, or self-hosting, lets you demonstrate it.
  • You want to depend less on one country. The experts quoted by NOS point out that the US government can restrict access to American technology. Paul Verhagen, an analyst at The Hague Centre for Strategic Studies, therefore sees opportunities for Mistral with governments and critical sectors such as defence, the Dutch tax authority and energy (NOS, in Dutch).
  • You want to run the model yourself. Open weights make that possible, commercially too. Expect serious hardware: the example on the model card runs on a server with eight GPUs.
  • Volume is high. For integrations that process thousands of documents a day, the price per token matters. Compare it with what you pay now.

For speech, Mistral has a separate model, Voxtral 3. How to use it to transcribe Dutch with the data kept in the EU is covered in Transcribing Dutch with AI.

When are ChatGPT, Claude or Copilot the better fit?

According to Jelle Zuidema of the University of Amsterdam, Mistral is a few months behind and slightly weaker than the models from OpenAI and Anthropic. Those companies have also raised far more money: according to Crunchbase, as cited by NOS, just over 6.6 billion euros for Mistral against around 181 billion for OpenAI and 153 billion for Anthropic.

So stay with your current tool if:

  • your team uses AI for its hardest work, such as long analyses or complex code, and every bit of quality counts;
  • you work deep inside Microsoft 365 or Google Workspace and want the AI built in right there;
  • you have nobody who can run a model of your own. Self-hosting is an IT project, not a setting.

Which tool suits which job is covered in AI tools for your business.

How do you get started with Mistral?

  1. List your AI tasks and note which data goes into each one. Use the red, amber and green categories from Using AI safely. Tasks with amber data are the first candidates for a European model.
  2. Test two or three of those tasks with Mistral alongside your current tool, using the same input. Judge on accuracy, usefulness and cost.
  3. Sort out the terms. Choose a plan with training switched off, sign the data processing agreement and check in the Trust Center which subprocessors are outside the EU.
  4. Build so you can switch. Keep prompts and work instructions outside the tool, and route integrations through one place. Then you can pick the right model for each task and depend less on a single provider.

When do you not need to do anything?

If you only use AI for text without personal data or confidential information, and your current tool works well, nothing needs to change. Keep Mistral in view for the moment your clients or your sector ask for processing in the EU.
